Sweet Potato, Parsnip & Nutmeg Soup

  • 1 large brown onion, cut into quarters
  • 30 g Butter
  • 3/4 teaspoon nutmeg ground
  • Half leek washed & roughly cut
  • 1 large parsnip (approx. 180g), washed, cut into pieces
  • 1 large carrot (approx. 180g), washed, cut into pieces
  • 250 g sweet potato, peeled, cut in pieces
  • 600 g water
  • 1.5 tablespoon thermomix vege stock
  • 60 g cream
  • --- ground pepper to taste
  • nutmeg, to sprinkle
  • fresh flat leaf parsley, to garnish

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Sweet Potato, Parsnip & Nutmeg Soup
  1. 1. Place onion and leek in bowl, chop 3 sec/speed 5.

    2. Scrap down sides of bowl with spatula

    3. Add butter & 3/4 tsp nutmeg, sauté 3 min/120 degrees/speed 1.

    4. Add Parsnip, Carrot, Sweet Potato, chop 15 seconds/speed 7.

    5. Scrap down sides of bowl with spatula

    6. Add water and Thermomix vegetable stock, cook for 20 min/100 degrees/speed 1.

    7. Add cream, blend for 1 min/speed 5, slowly increasing speed to 9.

    8. Season to taste with pepper, garnish with nutmeg and flat leaf parsley.  

    9. Serve Hot

Tip

The parship adds a lovely sweetness to this soup, complemented well by the nutmeg. 

Serve soup with fresh bread rolls on the side.

For a dairy free option, leave out cream, use oil instead of butter, it'll still be just as good.

    This was sooo yummy! Never had parsnip before but it came in my weekly produce delivery and was a winner. Didn't add the cream or leek though!
