Sweet Potato & Pear Soup

Ingredients

Soup

  • 150 gram brown onion
  • 10 gram olive oil
  • 10 gram unsalted butter
  • 700 gram orange sweet potato
  • 400 gram pears, cored - not peeled
  • 460 gram chicken stock
  • sour cream to serve

Recipe's preparation

  1. Place 1 (150gm) onion, halved, into bowl.
    Blitz 3 seconds, speed 7.
    Scrape down.
    Add 10gm olive oil and 10gm butter.
    Saute 6 minutes, Varoma temp., speed 1.
    Add 700gm peeled, cut into chunks, orange sweet potato.
    Blitz 5 seconds, speed 6.
    Scrape down.
    Take stem off and core 3 (400gm) pears. Add to bowl.
    Add 2 cups (460 to 500gm) chicken stock.

    Place simmer basket on lid to prevent spatters.
    Cook 25 minutes, 100ºC, speed 1.
    Slowly take up to speed 10 for 40 seconds.
    Serve with a dob of sour cream.

Tip

Can be thinned down with additional stock.

Can be frozen.

    Had this soup in a cafe last week, made with white sweet potato and had goats cheese as well, it was so yummy, so I have purchased the ingredients and am thrilled to see this recipe here, can't wait to make it for my girlfriend coming for lunch tomorrow.
