  • 1 Onion halved
  • 2 Large potatoes peeled and cut into 1-2cm cubes
  • 1 clove garlic
  • 4 Large zucchini chopped
  • 1 L Liquid Chicken Stock
  • 1 Cup Boiling water
  • 1tbsp/15g olive oil
  • 3/4 Cup fresh cream
  • Parmesan to garnish
  • salt and pepper to taste

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add onion and garlic to mixing bowl roughly chop (3 Sec Sp 4)
    Scrape bowl
    Add oil, chopped zucchini and potato
    Cook 5 minutes 80deg Sp 1 Reverse
    Scrape bowl
    Add stock
    Add the 1 cup Boiling Water

    Cook 25 minutes 100deg Speed 1.5 Reverse

    Blend Speed 7.5 for 30 seconds or until smooth consistency

    Add 3/4 Cup cream

    Warm and mix 4 minutes 100deg Speed 2

    Garnish with grated Parmesan and Salt and Pepper to taste.

Tip

Be careful with quantities, this meal uses the whole capacity of the mixing bowl. Hence why it's not suitable for models prior to TM5.

    I made this last week when hubby had a really sore throat. I used my TM31 but reduced the quantities by about a quarter. It was really lovely, creamy and delicately flavoured. I added a few fresh herbs such as parsley, chives chervil and tarragon - which are abundant in my garden at the moment - and a good pinch of white pepper. I froze the leftovers, and they thawed and reheated well.
