Ingredients

24 portion(s)

Feta & Spinach Mixture

  • 100 g English spinach leaves
  • 120 g Bulgarian Feta
  • 250 g ricotta cheese
  • 1 egg

Pastry

  • 6 sheets Puff Pastry, thawed
  • 10 g Milk, for brushing pastry
5

Recipe's preparation

  1. Preheat oven to 180°C

Add English Spinach to bowl Speed 5/30 seconds

Add Feta, Ricotta and egg. Mix Speed 5/1 minute. You can mix for longer to attain desired consistency.

  2.  Prepare pastry by rolling spinach mixture in desired shape and brush with milk

     Cook until golden brown

  3. Here are some ideas for preparing your pastry. I prefer to mix it up.

  4. Note: More feta can be added for a stronger taste. I make mine with less fetta so it appeals to the whole family (toddlers and adults alike).

Just made these for a quick and easy dinner - delicious and so versatile! I had to adjust as I only had 3 sheets of frozen puff pastry and no ricotta. I used a whole bag of baby spinach (120g), 290g feta and 80g grated Colby + the egg. I added 1 clove minced garlic, a large handful chopped shallots - green ends only and half teaspoon dill. I chopped the spinach and then the rest for a lot shorter time than stated as I wanted the mix a little chunkier. I cut each pastry sheet in half and made large 'sausage' rolls. Cooked at 190 (conventional) for about 20-25 mins. Fed 4 adults. Will definitely make again and again and again! Thanks for sharing Smile
