Spinach and Pumpkin Risotto

Ingredients

4 portion(s)

  • 1 onion large
  • 3 garlic
  • 50 grams EVOO (extra virgin olive oil)
  • 370 grams Aborio Rice
  • 3 tbsp TM veggie stock concentrate
  • 200 grams diced Pumpkin
  • 1100 grams water
  • 2 handfuls fresh spinach
  • 80 grams white wine

Recipe's preparation

  1. Place onion and garlic into the bowl and chop for 3 secs speed 4.

    2. Add oil and saute on  2mins/100C/ Gentle stir setting

    3. Insert butterfly if using. Add rice and wine and cook for 2 mins /100C/Gentle stir setting/ No counter-clockwise operation

    4. Add stock, water and pumpkin (and mushrooms if using) and cook for 20 mins on 100/ Counter-clockwise operation/ Gentle stir setting.

    5. Line thermoserver with spinach, pour risottto in and let rest for min 5-10 minutes to reduce. 

    6. Serve with Parmesan cheese

Tip

Depending on size and type of pumpkin you may need to cook for 3 - 5 minutes longer.

If you have mushroom available and to your taste add when adding pumpkin.

If choosing to not use wine keep the step and saute rice without wine.

Cook with or without Butterfly.

Freezes fine.

    I'm not sure what I've done, I did follow recipie but have had to cook for over 40 mins. 😩😐ended up turning more in a glag type of risotto. I think maybe I did the pumpkin too big. They look smal enough but who knows

    I do not like risotto but this is beautiful! Kids are taking it in their lunches tommorow. I grated 40g of Parmesan at beginning and placed on top while resting in thermoserver. I did need to cook for 6 more minutes

    This is a lovely recipe! It has such a nice consistacy. I added 1 & 1/2 slices of bacon, thyme and mushrooms. Oh and stirred in some paramesan cheese before serving. Thanks!

    Easy recipe but agree that it is lacking in favour. Perhaps adding chicken or bacon would help give it more flavor as it is quite bland. But that being said it was devoured by my 3 yr old

    I added the parmesan and also roasted pine nuts but this was still rather bland. Its was okay but just tasted like it was missing something. I think as someone else mentioned it would be nice if the pumpkin was roasted before adding.

    Fantastic recipe. Live the idea of using the butterfly as so many other risotto recipes have shredded the vegetables I added.

    I also only used one clove of garlic and reduced the water so the risotto was nice and thick!

    3 tblsp of the veg stock concentrate is way too much!! Was very salty. 

    I also had to cook it for 20 minutes longer. Apart from that I thought it was a good, easy recipe. I added pine nuts too.

    Made this one last night and it was barely palateable tmrc_emoticons.( tasted like garlicky mush. I initially thought 3 cloves seemed like a lot but followed the recipe completely due to the great reviews, but shoils have followed my gut! Waaaaay too much garlic and not enough flavour from anything else.

    I was wondering the same thing. I made it tonight, added the 3 tablespoons of concentrate stock and the whole lot was inedible.

    Really liked this. I grated a load of parmesan first, ready to sprinkle over at the end. I also had no vege stock concentrate so I used chicken stock powder. It was quite a thick risotto after sitting in the Thermoserver for 5 minutes, but that didn't bother me. It made the little bit of leftover quite a solid lump the next day though!

    So delicious. Made this as per recipe except I chopped the onion a little extra (don't like it too chunky) and used coconut oil instead of olive oil (I don't use olive oil in heated dishes). Yum!
