Dressing
- 3 cloves garlic
- 15 g ginger, peeled
- 1 Red Chilly Powder/Sweet Paprika/Keen's Curry Powder
- 50 g palm sugr
- 40 g lime juice
- 30 g fish sauce
- 50 g Rice Bran Oil
- mint & basil leaves, handful of each
Salad
- 700 g water
- 2 chicken breasts, cubed
- 4 handfuls baby spinach
- 1/2 savoy cabbage, shredded
- 1 Lebanese cucumber, diced
- 1/2 red capsicum, sliced
- 100 g salted roasted peanuts, chopped in TMx 4 sec speed 5
- lime wedges to serve

Recipe's preparation
Place all salad dressing ingredients into TM bowl and blend 10 sec on speed 8, set aside
Without washing bowl add water and steaming basket containing chicken, cook 15 mins at Varoma temp speed 3, make sure cooked through.
Remove basket and pour away water, return chicken to TM bowl and shred 3-4 sec, revese speed 4, let cool slightly.
Assemble salad onto platter, top with chicken, peanuts and dressing, garnish with mint leaves and chilly, serve with lemon wedges.

Yum yum yum !!!! Gorgeous recipe , first time I had shredded chicken in my thermie - absolutely amazed how easy and clever that is !!!! Love the dressing - used real chillie and left out the curry powder, , but it was a big success - definitely on my "make often " list ! Thanks so much.

Can you clarify exactly how much chilli powder in the recipe please?
I made a couple of tweaks to
I made a couple of tweaks to have for dinner. 400g brown rice with cocnut milk and water totaling 1100g steamed in basket for 35 minutes (only use 3/4 rice for salad). Make dressing and set aside. Cooked chicken shredded and then continue on with the recipe. cashews instead of peanuts as that is what I had. Great for dinner for 3 adults with left over for lunch and rice to do stirfry tomorrow night.

I'm not sure how this tastes,
I'm not sure how this tastes, I went to make this recipe under time pressure with two little kids under foot. I read the instructions several times and being new to thermomix world it was not obvious to me the error until it was too late.
There is a key word missing from the first instruction "dressing".
warning to any other newbies or sleep deprived parents. I wasted a lot of good ingredients - I was so looking forward to it too.
