Hummus with chilli and tumeric roasted pumpkin

Ingredients

500 g

Hummus

  • 400 grams Chick Peas, Soft - from can or soaked over night
  • 2 tablespoons tahini
  • 3 tablespoons lemon juice, From 1 lemon
  • 2 tablespoons extra virgin olive oil, For hummus
  • 3-4 cloves garlic, Peeled
  • water, 100ml or so to fine tune texture
  • dash extra virgin olive oil, For pumpkin
  • 1 teaspoon chilli powder, Sprinkle to taste
  • 1 teaspoon tumeric, Sprinkle to taste

Recipe's preparation

    Roast the pumpkin
  1. Preheat oven to 200 deg celsius. Cut pumpkin into 1-2 cm cubes and place in shallow paper lined baking tray. sprinkle with extra virgin olive oil, chilli powder and tumeric. Roast for 30-40 min until soft.

  2. Hummus
  3. Place all the ingredients into the thermomix bowl and mix for 3 min on speed 4. This is quite mild so test and adjust texture and taste by adding dashes of spices, oil, water or lemon juice depending on likes and mix at 30 sec at speed 4 and taste. If you want a smoother texture give a final whizz for 30 sec at speed 7.

     

    When serving sprinkle chilli powder lighty over the top. If you don't want the 'hot hit' sprinkle paprika as substitute.
