- 1 medium brown onion
- 1 piece Fresh root ginger
- 1/2 tbsp salt
- 200 gram Cider Vinegar

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipe's preparation
- Peel and stone mangoes
Add 2 mangoes to TM with onion and peeled ginger
Chop 8 seconds speed 9. Scrape down sides.
Dice 3rd mango and add to TM with remaining ingredients.
Place steaming basket on top instead of MC.
Cook 100C, backwards, speed 1, 1 hour.
When finished cooking, place into sterlized jars and seal whilst still hot.
When cold, label and store in cupboard. Once opened, store in fridge.
