  • 100 g caster sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 300 g Self Raising Flour
  • Almonds, walnuts, jam, chocolate drops, to decorate (optional)

Recipe's preparation

  1. Preheat oven to 180ºC. Line a baking tray with baking paper and set aside.

  2. Place butter into mixing bowl and cook 20 min/Varoma/speed 1. Allow to cool slightly.

  3. Add sugar and egg and beat 20 sec/speed 4.

  4. Add vanilla and flour and mix 5 sec/Dough mode"Dough mode" .

  5. With damp hands, roll small balls of dough and place onto prepared tray. Press nut (optional) into centre of each ball and bake (180°C) for 5-7 minutes until golden.

    Absolutely delicious. Light, crumbly, soft, buttery, slightly bitter from the browned butter, but sweet and short. I made 48 of these tonight in under an hour. Used walnuts, Reese's peanut butter cup bits, almonds, and jam. Everyone loved them and they were gone within 2 hours!!!

    Vampira: Yes, these could be made in a TM6, although please be aware that we have not tested this recipe for TM6 here in our Recipe Development kitchen. Heating times may vary so we advise keeping an eye on it when heating the butter and adjusting the time if necessary.

    These muffins are so delicious. Quick and easy to make, they make a wonderful dessert with cream or ice cream or a tasty lunchbox snack. I substituted buttermilk with normal milk with a little splash of white vinegar. Thanks for sharing this recipe.

    Very easy, very tasty, lovely texture. Held their shape well on the baking tray. I added about 1 tablespoon of almond metal to mixture.
