Ingredients

BASE

  • 115 grams Butter
  • 115 grams sugar
  • 227 grams flour
  • 1 teaspoons baking powder
  • 1/2 teaspoons vanilla essence
  • 1 portion egg

MARSHMALLOW

  • 1 sachet jelly dessert powder, sweetened, strawberry flavour
  • 360 gram water
  • 200 gram sugar

Recipe's preparation

    Method
  1. Preheat oven 180 degrees, grease and line slice tray with non stick baking paper.
  2. Add butter and sugar to bowl. 30seconds/ 60 degrees/ speed 1.
  3. Add flour, baking powder , vanilla essence and egg and combine 30 seconds speed 3.
  4. Transfer mixture into tray and press and smooth using back of a spoon or MC. Bake for 15-20 minutes until lightly coloured , remove from oven and allow to cool completely.
  5. To make marshmallow add sugar to mixing bowl and blitz 10 seconds speed 9 MC on. Tip out into a bowl .
  6. Add water and jelly packet, being careful to tip around edge of bowl avoiding the blade. Then cook 8 mins/ 100 degrees /speed 2 MC off

    Set aside at room temperature to cool.
  7. Once cool insert butterfly and whip for 8 mins speed 4 MC off. You can place simmering basket on top if your concerned about splatter.
  8. Pour over pre baked slice base , sprinkle with coconut or ice with Chocolate icing and sprinkle with chopped nuts. Refrigerate until set. Slice with a hot, wet knife.
