Ingredients

Dough

  • 150 g self-raising flour
  • 125 g Greek yoghurt

Filling

  • 80 g Fresh Baby Spinach, chopped
  • 80 g fresh mushrooms, sliced finely
  • 50 g Mozzarella Cheese, grated
  • 50 g Danish feta cheese, (Smooth)
  • 1 tsp tuscan seasoning

Recipe's preparation

  1. Add all dough ingredients to the bowl and mix 10 sec/speed 4 /MC on
  2. Kneed with the dough function for 1 min, then roll into a ball and put in a bowl with a tea towel over to rest for approx 15 min while you make the filling
  3. Add spinnach and chop 3 sec/speed 7/ MC on (no need to wash bowel from making the dough)
  4. scrape all the spinnach into a sive and use the back of a spoon to squeeze out liquid (or put into a nut bag and squeeze)
  5. Place squeezed spinach, and all other filling ingredients back into the bowl (tip - you can pan fry the mushrooms foirst if you prefer that flavour) and combine 3 sec/speed 5Counter-clockwise operation"Counter-clockwise operation" / MC on
  6. Divide the dough into 2 or 3 portions and roll each one vey thin rectangle (about the size of a large dinner plate.
  7. Divided the filling to corrosponding 2 or 3 portions, and spread onto half of the dough, leaving a 2-3cm boarder, before folding the unfilled side over and pressing to seal.
  8. Cook 2-5 min in a sandwich press, or lightly olied in a frypan 2-4 min each side.

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
