  • 450 g Macaroni Pasta, Any hollow pasta
  • 450 g Grated Mozzarella
  • 450 g Grated Colby
  • 225 g Grated Sharp cheddar
  • 1 level tsp Garlic powder
  • 1 level tsp Onion powder
  • 1 level tsp smoked paprika
  • 1 level tsp chicken bouillon powder
  • 1 level tsp mustard powder
  • 40 g unsalted butter
  • 25 g flour
  • 337 g evaporated milk
  • 477 g thickened cream

Recipe's preparation

  1. 1. Cook Pasta (Stovetop preferred for quantity):
    Cook cavatappi in salted water per package instructions. Drain and set aside. (Thermomix can cook pasta, but not ideal for 1 lb due to volume.)
  2. 2. Shred Cheeses (Do in batches):
    • Add cheese (cubed) to mixing bowl, no more than 250 g at a time.
    • Speed 7 / 10 sec.
    • Transfer to a separate bowl and repeat until all cheese is shredded. Set aside.
  3. 3. Make Roux:
    • Add butter to mixing bowl.
    • 3 min / 100°C / Speed 1.
    • Add flour.
    • 2 min / 100°C / Speed 1.5.
  4. 4. Add liquids and seasonings:
    • Add evaporated milk, heavy cream, garlic powder, onion powder, paprika, bouillon powder, and mustard powder.
    • 8 min / 95°C / Speed 3.
  5. 5. Melt in Cheese:
    • Add all shredded cheeses (reserve some for topping if baking).
    • 5 min / 90°C / Speed 2.
  6. 6. Combine with Pasta:
    • Pour sauce over cooked pasta in a large bowl or baking dish. Mix well.
    • Optionally, transfer to a baking dish, top with reserved cheese, and broil until golden and bubbly (about 5-10 min).
  7. Notes:
    • Add cooked bacon, jalapeños, or breadcrumbs if you want to level it up.
    • Adjust seasoning to taste – this is your base flavor bomb.
