Ingredients

Soup

  • 12 Leeks (Green Part Only)
  • 4 large white potatoes
  • 1 clove garlic
  • 1.5 litres water
  • 2 tablespoons Butter
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1-2 tablespoons vegetable stock concentrate
  • 120 grams full fat cream cheese

Recipe's preparation

    Soup
  1. Place garlic clove in thermomix bowl and chop for 3 seconds/Speed 8 

    Thinly slice the green parts of the leeks and place in thermomix with two tablespoons of butter and olive oil and chopped garlic and sauté for 3 mins on Varoma/Speed 1

     Add potatoes, water and stock and cook for 15-20 min/100 degrees/Speed 1

     Blend for 30 seconds on Speed 1, gradually increasing speed from 1 to 8 until desired consistency is achieved. Add cream and blend for 30 seconds/Speed 4-5

     To serve pour soup into individual bowls and swirl extra cream in centre of dish and sprinkle with chopped parsley, chives or thyme

     Serve with crusty warm bread

    If you use less leeks, use less water.

    Used lactose light milk instead of cream and oil instead of butter and yes will use a little less water

    Yes definately 2 leeks and 600ml of water 'no oil' and a sprinkle of nutmeg before serving tmrc_emoticons.)

    Just made this for lunch, nice, easy and yummy, although I would use less water next time as I thought it was too runny. For those of us weight concious people I replaced the butter with weight watchers canola spread and used philledelphia lite cooking cream  tmrc_emoticons.)

    I was thinking the same.. maybe 12 spring onions?? I would use usually 1-2 leeks when I make a non thermi potato and leek soup. tmrc_emoticons.)
