Infant/toddler brown rice and veggie risotto

  • 200 g brown rice
  • 2 cloves garlic
  • 1/2 onion
  • 50 g Parmesan cheese, Cubed
  • 700 g Boiling water
  • 400 g mixed vegetables, Whatever is in the fridge

Recipe's preparation

  1. Weigh in brown rice. Chop 3 sec/speed 7 (this breaks rice down to decrease cooking time)
    Set aside
  2. Add parmesan cheese chop 10 sec/speed 9
    Set aside
  3. Add vegetables to bowl and chop 5 sec/speed 5
    Set aside
  4. Add garlic cloves and peeled onion, 3 sec/speed 7
    Scrape down side of bowl
    Add 2tbsp olive oil 3 min/Varoma/speed 1
  5. Insert butterfly
    Add rice and saute 2 min/100degrees /Counter-clockwise operation/speed 1
  6. Add boiling water
    10min/100degrees/Counter-clockwise operation/speed 1
  7. Add prepared vegetables
    15min/100degrees/Counter-clockwise operation/speed 1
  8. Stir through parmesan cheese and season with pepper

Tip

You can grate or dice vegetables by hand if preferred
Could add diced/minced chicken or fish
I used broccoli, carrot, celery, zuchinni, spinach and mushrooms in pictured risotto
Herbs could be added to add flavour without using salt/stock etc
