Almond crackers (grain free)

Ingredients

Crackers

  • 3 sprigs Rosemary (leaves only)
  • 270 grams natural almonds
  • 1 tablespoon chia seeds
  • 3 tablespoon water
  • 30 g olive oil
  • 1/2 teaspoon sea salt

Recipe's preparation

  1. Mix chia seeds and water and set aside

     Preheat oven to 170 and line 2 trays with baking paper

    Add rosemary and almonds to bowl and mill for 5 seconds, speed 7

    Add salt, olive oil and chia seed mix. Mix for 15 seconds on speed 6 until combined

    turn out on to thermomat and form into a dough 

    divide into two and set one aside

    Roll dough out between thermomat and baking paper until very thin (about 2mm) and transfer to a baking tray. 

    sprinkle extra salt over the top and lightly press on

    repeat process with second batch of dough

    Using spatula cut dough into bite size pieces and bake for 15- 20 minutes or until lightky golden

    when cooked, turn oven off and cool crackers in the oven with the door open

    I made these today and was very pleased how these crackers tasted. Love the rosemary flavour...that is what sets this recipe apart from the others I've looked at.  I rolled them out alot thicker than you recommened ...will definately make these again...looking for grain free crackers to replace the rice cruskets that I normally eat. So many thanks for this recipe.  tmrc_emoticons.)
