Seedy crackers

  • 56 grams pepitas (pumpkin seeds)
  • 56 grams sunflower seeds
  • 64 grams chia seeds
  • 66 grams buckwheat raw
  • 50 grams sesame seeds
  • 20 grams Flax seeds
  • 140 grams tapioca flour
  • 500 grams Boiling water
  • 30 grams coconut oil
  • 2 pinches salt

  • 4 pinches sea salt flake, For sprinkling on top

Recipe's preparation

    Annie's Seed crackers
  1. Weigh all the ingredients into the Thermomix bowl.

    Stir 5 seconds, Counter-clockwise operation"Counter-clockwise operation" on speed 2.

    Set aside for 5 - 10 minutes.
  2. Preheat oven to 180c.

    Cut 8 pieces of baking paper, the same size as 4 oven trays.

    Place a quarter of the seedy mixture on each piece of baking paper on a flat surface.

    Place a second piece of baking paper on top and roll out between the two pieces until very flat and even.
  3. Carefully peel back and remove the top layer of baking paper.

    Repeat with the remaining mixture. Sprinkle all with flaky sea salt.
  4. Place in the oven and bake for 25 minutes. Remove from oven, flip the sheet of crackers and bake for another ten to fifteen minutes. You will know they are ready if they snap rather than bend. Keep a close eye near the end as they burn easily.

    Dry on racks and snap apart. When cooled, place in an air-tight container.


    Serve with cheese, quince paste or dips.

Tip

You dont have to use the exact measurements of the seeds as detailed above but DO make sure you use that amount of chia seeds as this is what helps bind the crackers.
