cherrytomato flan

Ingredients

flan pastry

  • 100g butter chilled cubes
  • 200g plain flour
  • 50g parmesan cubed
  • 1/2 tsp salt
  • 50g cold water

filling

  • 250g cottage cheese
  • 100g feta cheese, cut into generous bite-sized cubes
  • small bunc basil
  • 2or 3 punnets cherry tomato

topping

  • 50g stale breadcrumbs, italian i used panko cos i had no bread
  • 20g Butter softened

Recipe's preparation

    pastry
  1. grate parmesan 5sec/speed9 leave in jug add flour/salt/butter mix 10secs/speed6


    add cold water and mix on interval till comes together look through lid.


    tip on to mat  and roll gently to ball flatten down wrap and put in fridge for 30mins


     


    i used two small tins,but you could just use one large,i lined tins with wet baking paper and i then blind baked the pastry it takes about 30mins in 190 oven ,set aside to cool

  2. place cottage cheese and basil in jug and mix 5secs/speed6 then add feta then mix 3 secs speed4 rev


     


    spread filling over bases of the pastry cases and then add cherry toms pack tightly and brush with olive oil and season


    ,cook for 30-40 mins 190 keep eye on them,i cooked till the tomatos start to burst,i then removed from oven and sprinkled with bread crumbs and brush with a little butter,you can make bread crumbs in jug with butter just turbo for a few seconds


     


    return to oven for 15mins till crisp

Tip

serve hot or cold with salad.go easy on salt cos feta is salty
