  • 40 g Parmesan cheese
  • 1 egg
  • 1/4 --- Cup Oil (I use macadamia)
  • 1 clove garlic
  • 1 Whole Zucchini
  • 1 Whole Carrot
  • 1 cup milk
  • 1 tbsp Mixed Herbs, Thyme, Rosemary, Sage, Oregano work well
  • 2 Cups Gluten Free All Purpose Flour
  • 2 tsp Gluten Free Baking Powder
  • Salt & pepper to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Prepare a 12 hole muffin tin or 2 x 6 hole muffin tins with baking paper, wet and moulded to tray. Preheat oven to 180°c. Weigh in 40g of parmesan into the TM bowl, and grate with MC in place on speed 6.5 for 20 seconds, remove from bowl and set aside. Clean bowl, dry and add carrot & zucchini, cut into rough chunks, grate on speed 6.5 for around 20 seconds, scrape down, repeat if necessary, remove from bowl and set aside. Without cleaning the bowl, add garlic and herbs, chop speed 6 for 10 seconds, scrape down sides of bowl if necessary and repeat. Add 1/2 the oil to the bowl, grated veges and chopped bacon, set time to 3 minutes, temp 90°, speed 1, Counter-clockwise operation. When finished sauteing, add the milk and egg to the cooked mixture. Mix on speed 3.5 for 30 secondsNo counter-clockwise operation until well combined. Add the flour, baking powder, salt pepper, rest of oil and grated parmesan, mix on speed 3 for 60 seconds, until well combined. Evenly distribute across muffin holes, in baking paper. Bake in oven for approx 30 minutes, or until skewer comes out clean.

Tip

This can be made with wheat flour if not gluten sensitive, just replace GF flour with plain flour, and reduce baking time by 5 minutes.

    Hi I too cannot see the zucchini and carrot in the ingredients list could you please update with the quantities for each item so I do not have to guess. tmrc_emoticons.~

    Hi there, I'm not sure why, but I can't seem to see zucchini as one of the ingredients - and I thought there would be zuchini in bacon adn zuchini muffins!  Also, the instructions mention adding carrot, but there is no carrot on the ingredients list either.  Could you add them?  Thanks!
