  • 100 g Gruyere cheese, cut into pieces
  • 125 g Milk
  • 125 g water
  • 100 g Butter
  • 1 pinch salt

Recipe's preparation

  1. Preheat oven to 220C.

  2. Grate cheese in TM bowl for 6-8 seconds on speed 8 and set aside in a bowl.

  3. Place milk, water, salt and butter in TM bowl and cook for 10 minutes at 100C on speed 2 (without MC).

  4. Add flour and mix for 30 seconds to 1 minute on speed 4 or until you see the paste comes away from the sides of the bowl.

  5. Add eggs to the mixture by adding one egg at a time onto the blades for 30-40 seconds on speed 5. Add ¾ of the cheese and blend.

  6. Transfer paste to piping bag and pipe on rounds of paste 6-8 cm in diameter (or spoon mixture into small balls) onto a tray lined with baking paper. Scatter with remaining cheese.

  7. Place in preheated oven for 10 minutes then lower temperature to 200C and bake for a further 10 minutes.

  8. Serve immediately or keep in warm oven for 5-10 minutes door ajar.

    Are you sure the quantity of liquid to flour is correct? I have had to about double the flour to get it resembling the right consistency. When I test baked a few the pate was so thin it was hard to keep them small. You seem to have more liquid in here compared to other receipes. Did it really work like this or am i missing something?

    You could use any cheese. A good substitute for Gruyere could also be Emmental. If you want to make them child friendly you use substitute cheddar or tasty cheese.
