Jenni's Savoury Muffins

  • 1-2 cloves garlic
  • 1 onion, halved
  • 3 sprigs parsley, leaves only
  • 100 grams Finely diced bacon
  • 1 cup of mixed vegetables
  • 2 cups of plain flour
  • 2 teaspoons baking powder
  • 1.5 cups of grated cheese
  • 3/4 cup of buttermilk
  • 1 egg
  • 1 heaped tablespoon Relish or Chutney of choice
  • seasoning, to taste

Recipe's preparation

  1. Preheat oven to 180°C.

  2. Line and grease muffin tin.

  3. Place garlic, parsley and onion in mixing bowl and chop 5 sec/speed 6

  4. Scrape down sides of mixing bowl and add diced bacon. Sauté 5 mins/100°C/Speed 2

  5. Add mixed vegetables and continue to cook for further 2 mins/100°C/Speed 2

  6. Add remaining ingredients to the mixing bowl and mix 20 secs/Speed 4

  7. Scrape sides of mixing bowl and mix for further 20 secs/Speed 4

  8. Divide mixture between muffin cases and bake for 15 to 20 mins or until a skewer inserted into the centre comes out clean. Turn onto a wire rack to cool.

I always pre-grate my cheese. if you have not already done so, you can grate 10 secs/Speed 6

To make young child friendly, dice the veggies small and cook a little longer with onion and bacon to soften. I use whatever is on hand, often that includes peas, corn and carrots. Frozen is fine.

I use buttermilk as it gives a softer result but normal milk should do the job just fine. 

To boost veggie content, try adding a puree of choice to the mixture
