  • 3 sprigs parsley, leaves only
  • 100 grams Finely diced bacon
  • 1 cup of mixed vegetables
  • 2 cups of plain flour
  • 2 teaspoons baking powder
  • 1.5 cups of grated cheese
  • 3/4 cup of buttermilk
  • 1 egg
  • 1 heaped tablespoon Relish or Chutney of choice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180°C.

  2. Line and grease muffin tin.

  3. Place garlic, parsley and onion in mixing bowl and chop 5 sec/speed 6

  4. Scrape down sides of mixing bowl and add diced bacon. Sauté 5 mins/100°C/Speed 2Counter-clockwise operation

  5. Add mixed vegetables and continue to cook for further 2 mins/100°C/Speed 2Counter-clockwise operation

  6. Add remaining ingredients to the mixing bowl and mix 20 secs/Speed 4Counter-clockwise operation

  7. Scrape sides of mixing bowl and mix for further 20 secs/Speed 4Counter-clockwise operation

  8. Divide mixture between muffin cases and bake for 15 to 20 mins or until a skewer inserted into the centre comes out clean. Turn onto a wire rack to cool.

Tip

I always pre-grate my cheese. if you have not already done so, you can grate 10 secs/Speed 6

To make young child friendly, dice the veggies small and cook a little longer with onion and bacon to soften. I use whatever is on hand, often that includes peas, corn and carrots. Frozen is fine.

I use buttermilk as it gives a softer result but normal milk should do the job just fine. 

To boost veggie content, try adding a puree of choice to the mixture
