Middle Eastern Inspired Pizza

Ingredients

4 portion(s)

Pizza Dough

  • 220 g warm water
  • 2 tsp dry yeast
  • 400 g baker's flour
  • 20 g olive oil
  • 1 tsp salt

Middle Eastern Spice Mix

  • 2 tbsp Nutmeg, ground
  • 2 tbsp cumin, ground
  • 2 tbsp coriander, ground
  • 1 tbsp allspice
  • 1 tbsp ginger, ground
  • 2 tsp paprika, smokey
  • 2 tsp salt
  • 1 tsp cayenne pepper
  • 1 tsp cinnamon, ground

Hummus

  • 1 tin of chickpeas (400g)
  • 1 tbsp tahini
  • 1 tbsp water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp cumin
  • juice of 1 lemon

Spiced Lamb Mix

  • 1 onion, quartered
  • 1 clove garlic, peeled
  • 20 g olive oil
  • 250 g lamb mince
  • 1 tsp middle eastern spice mix
  • 1 tsp Smokey Paprika

Pizza!

  • 12 bocconcini balls, halved
  • 12 cherry tomatoes, halved
  • 1 lemon, in wedges
  • 2 tsp sumac

Recipe's preparation

    Pizza Dough (From Basic Cookbook)
  1. Describe the preparation steps of your recipe

  2. 1, Add water & yeast to TMX bowl, combine 20 secs / spd 2.

    2. Add flour, oil & salt to bowl. Knead 3 mins / Dough mode.

    3. Set aside to rest & rise in a wam spot.

    4. Rinse bowl.

  3. Middle Eastern Spice Mix
  4. 1. Add all ingredients to TMX bowl and combine 10 secs / spd 4.

    2. Set aside (no need to rinse bowl).

  5. Hummus
  6. 1. Add all ingredients to TMX bowl. Mix 5 secs / spd 5.

    2. Scrape down sides of bowl & repeat, 5 secs / spd 5.

    3. Set aside no need to rinse bowl.

  7. Spiced Lamb Mix
  8. 1. Add onion & garlic to TMX bowl. Chop 3 secs / spd 7.

    2. Scrape down sides of bowl, add oil.

    3. Saute 5 mins / Varoma / spd 1.

    4. Add lamb mince, middle eastern spice mix (only a teaspoon!) and smokey paprika.

    5. Saute 7 mins / Varoma / spd 1.5.

  9. Pizza!
  10. 1. Preheat your oven as high as it will go & put your pizza stone in. If you don't have a pizza stone, put your oven on 220C with the fan.

    2. Divide the rested pizza dough into 4 portions - wrap 2 & placce in the freezer for future use.

    3. Roll out the balls of dough on parchment/greaseproof paper.

    4. Spread each pizza with around half the hommus.

    5. Top with half the mince.

    6. Add halved bocconcini balls and cherry tomatoes.

    7. Bake one at a time on the pizza stone for around 6-8 mins or on a baking tray (no pizza stone) for around 10-15.

    8. Top cooked pizza with dollops of sour cream, freshly squeezed lemon juice and a sprinkling of sumac.

This looks like a long recipe but it's deceiving, the dough is ready to go once the lamb mince mixture is cooked.

Sumac can be found at the local supermarket, it's a fresh, mint / lemon flavour & it's really lovely. I highly recommend seeking it out.

While eating this, I thought it tasted a little like a gozleme. tmrc_emoticons.)
