Paleo Zucchini Slice

Ingredients

6 slice(s)

Ingredients

  • 20 g Parsley including stems
  • 500 g zucchini, Cut in pieces
  • 6 large eggs
  • 1/2 cup Coconut Flour
  • 60 g macadamia oil
  • sea salt, To taste
  • pepper, To taste
  • Dried herbs of choice (eg Rosemary), To taste
  • water, If needed to thin out mixture
  • 6 cherry tomatoes, Sliced

Recipe's preparation

    Method:
  1. 1. Add parsley and chop for 3 sec, speed 8

  2. 2. Add zucchini and chop for 4 seconds, speed 4 until disired consistency

  3. 3. Add flour, eggs, oil, water, salt, pepper, dried herbs and mix 20 seconds, Counter-clockwise operationGentle stir setting

  4. 4. Repeat previous step if necessary with aid of spatula. When all ingredients are combined, pour mixture into lined baking dish

  5. 5. Top with sliced cherry tomatoes and extra salt, pepper and herbs if desired 

  6. 6. Bake in the oven at 160deg (fan forced) for 30-40 minutes or until golden on top and cooked through

    Sorry to hear your disappointment MandaC82, I'll have a play with the ingredients next time I make a batch and pay careful attention to how it turns out. I find the coconut flour can be a bit heavy and does take a lot of liquid, which I think could contribute to the recipe being dry. Thanks for trying the recipe and providing feedback.

    Have tried this slice twice as the first time I thought I must have done something wrong due to the great reviews. We didn't enjoy this slice, it was very dry and even left overnight in the fridge to have in the lunchbox it wasn't a hit.
