  • 1 pinch sugar
  • 1 pinch salt
  • fresh basil leaves, (to taste)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Dough
  1. Line the Varoma bowl with parchment paper and set aside.
  2. Put the 10 g of fresh brewer's yeast and 100 g of water, mix:20 sec./speed 2.
  3. Add the 500 g of bakers flour, 150 g of water, 10 g of extra virgin olive oil, the 9 g of salt and the 40 g of butter, knead: Dough /2 min 30 sec
  4. Transfer the dough to the work surface and compact it into a smooth ball. Place the dough in the Varoma bowl and close with the lid.
  5. Put in 250 g water into mixing bowl, place the Varoma, set up Fermentation Ferment / 2 h / 37 ° C.
  6. Carefully remove the Varoma.
  7. Line the oven plate with parchment paper. Take the dough, work it quickly on the floured work surface and divide it into pieces of 35 g. Shape into balls, flatten them with your hands into discs (Ø 5 cm and thickness approximately 1 cm) and place them on the prepared plate. Cover the plate with cling film and let it rest for 45 minutes.
  8. Put in the 1000 g water and set:Cleaning. Empty the mixing bowl.
  9. Preheat the oven to 200 ° C. Meanwhile, in a bowl, mix the 200 g of tomato pulp, 15 g of extra virgin olive oil, 1 pinch of sugar, 1 pinch of salt, fresh basil, leaves to taste.
  10. Remove the cling film and distribute the sauce on each pizza. Bake in a hot oven for 10 minutes (200 ° C). Without turning it off, carefully remove the plate from the oven and garnish the pizzas with a few cubes of diced mozzarella for pizza and cook for another 5 minutes (200 ° C). Carefully remove from the oven and allow the pizzas to cool on a wire rack.
  11. Serve the pizzas.
