Spelt & Buckwheat Crackers

Cracker Dough

  • 170 g Spelt grain
  • 100 g buckwheat
  • 45 g oats
  • 60 g pepitas
  • 60 g sunflower seeds
  • 50 g Flaxseed
  • 15 g nigella seeds, optional
  • 35 g sesame seeds
  • 2.5 tsp salt
  • 200 g water
  • 20 g olive oil, or grapeseed oil

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven 200˚C

    Add Spelt, Buckwheat & Oats. Mill for 45 second speed 10

    Add remaining dry ingredients, mix Counter-clockwise operation 10 Seconds, Speed 3

    Add Water and Oil, Mix Counter-clockwise operation 20 Seconds, Speed 2.5.


    Divide mixure in two. Roll out one half thinly (I use two pieces of baking paper), put onto tray, using a knife, line the dough into the shape you want your crackers (squares/rectangles). if you wanted you could use cookie cutter.


    Bake for 10 -15 mins or until golden on top, and repeat with second half of dough.
