Sweet Potato, Zucchini & Feta Mini Muffins

  • 180 grams sweet potato, diced
  • 180 grams red onion, cut in half
  • 180 grams Zuchini, diced
  • 100 grams cheese, cubed
  • 80 grams flour
  • 3 eggs
  • 100 grams feta, crumbled

Recipe's preparation

  1. Preheat oven at 180 degrees
  2. Place sweet potato, onion, zuchini and cheese into theromomix and grate for 3-5 seconds on speed 5 (you want a grated texture)
  3. Add flour and eggs and combine 5 seconds Counter-clockwise operation speed 4
  4. Gently stir through feta.
  5. Place into mini muffin trays (silicon is best as they tend to stick!) and bake for 15-20 minutes (depending on the size of your muffin tray)

    These are so easy and will be on the rotation. NB: to self - add garlic and ham/bacon. Fits in pink muffin tin - 30mins.
