BREAD DOUGH

  • 360 grams room temp water
  • 1.5 teaspoons sugar
  • 2 teaspoons dried instant yeast
  • 600 grams white bakers flour
  • 2 teaspoons salt
  • 2 teaspoons Bread Improver (Optional)
  • 20 grams oil

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. To your Thermomix bowl - add water, sugar, yeast, flour, salt, bread improver & oil. Knead 6 minutes/dough function.
  2. Transfer dough to a lightly floured or oiled Thermomat & cover. Let this rest for 15 minutes.
  3. Shape dough & place into a Jumbo Sized Bread Tin.
  4. Cover, then place in a warm location & allow the dough to grow to the top of the tin - time will vary depending on temperature - this could potentially take a couple hours.
  5. Preheat oven to 180• fan forced, then bake until golden brown - approx 30/35 minutes. Immediately remove loaf & transfer to a cooling rack.
  6. For best results, slice once cooled, then freeze what you don't intend to eat the same day - it defrosts perfectly!

Tip

Dough loves a humid environment to proof/grow! I have great results spraying lightly with water, then placing in a warm location. You don't want the dough to dry out.

    Rachandnath: On or off is personal prefernce - a lid simply creates a square loaf tmrc_emoticons.) If you intend to use a lid be sure to slide the lid on handle first. And get it in the oven when the dough is a couple centimetres away from the lid (it will grow ever so slightly in the oven).
