Vege Seed Loaf

Ingredients

10 slice(s)

Dough

  • 220 grams pumpkin
  • 85 grams carrot
  • 135 grams zucchini
  • 4 eggs
  • 40 grams banana
  • 65 grams polenta
  • 140 grams kamut flour
  • 100 grams baker's flour
  • 2 teaspoons baking powder
  • 2 pinches salt
  • 1 pinch ground nutmeg

Seeds and corn

  • 72 grams corn kernels, (1 small tin)
  • 40 grams pumpkin seed
  • 20 grams linseed/flaxseed
  • 10 grams sunflower seed
  • 1 tsp thyme or mixed herbs, dried
  • Sesame seeds for decoration

Recipe's preparation

  1. Preheat oven to 160°C

     

    Line a loaf tin with baking paper

     

    Peel the pumpkin and chop into 2cm pieces 

     

    Chop the carrot into 2cm pieces 

     

    Chop the zucchini into 2cm pieces 

     

    Place the pumpkin and carrot in the TM bowl and chop for 5 seconds on speed 5

     

    Add the zucchini to the TM bowl and chop for 4 seconds on speed 5 and scrape down side of the bowl

     

    Add the eggs and banana to the TM bowl and combine  for 10 seconds on speed 3

     

    Add the rest of the ingredients in the dough section and slowly turn the speed up to 2, watching to make sure the flour is slowly incorporated 

     

    Mix on speed 2 for around 30 seconds or until most of the flour is mixed in

     

    Turn the speed slowly up to 5 and mix for 15 seconds 

     

    Scrape the flour off the sides, pulling the dough away from the edges of the bowl to make sure you're getting it all 

     

    Mix for another 10 seconds on speed 5 

     

    Add the ingredients in the Seeds and corn section and mix Counter-clockwise operation for 30 seconds on speed 3 or until well distributed 

     

    Spoon the mixture into the loaf tin

     

    Sprinkle with sesame seeds

     

    Bake for 1 hour

Tip

I haven't tried this yet, but I reckon this would be great with around 10g dukkah added in the dough section instead of the nutmeg. 

For a more corn bready taste, leave out the carrot.

Breakfast - this is delicious with banana, honey, sheep's milk yoghurt or berries

Snack - nice with hummus, sweet potato hummus, cucumber, avocado, guacamole or capsicum & sun-dried tomato dip

Dinner - great with soups, or as bread rolls with most dinners
