Zucchini and Carrot Slice

  • 75 grams Tasty cheese, Cubed
  • 6 sprigs flat leaf parsley
  • 1 large zucchini, Roughly chopped
  • 2 medium carrots, Roughly chopped
  • 1 medium brown onion, Quartered
  • 100 grams ham, Roughly chopped
  • 2 cloves garlic, Peeled
  • 100 grams self-raising flour
  • 4 eggs, Lightly Beaten
  • 35 grams Milk
  • 30 grams Rice Bran Oil
  • 1/4 teaspoon chilli flakes, Optional

Recipe's preparation

    Carrot and Zucchini Slice
  1. -Preheat oven to 180'c/160'c fan-forced

    -Prepare 25x25cm Silcone form (or grease tin) 

    -Place cheese in bowl. Grate 8 sec/speed 9. Set aside.

    -Place Parsley in bowl. Chop 3 sec/speed 7. Set aside.

    -Place Zucchini, Carrot, Onion, Ham and Garlic in bowl. Chop 3sec/speed 5. Scrape sides of bowl. Chop 2 sec/speed 5.

    -Add Flour, Grated Cheese, Parsley, Eggs, Milk, Rice Bran Oil, Chilli Flakes  ( and a pinch of Salt and Pepper to taste ) Mix 20sec/ reverse/ speed 4. 

    -Place mixture into silicone form  (if using silicone form, place on baking tray) 

    -place into oven and bake for approx 35min

    -Remove from oven, allow to cool. Serve with salad

    I love this simple recipe, I tweeked it a little, didnt have Bacon or Ham so I used left over roast chicken and used sweet potoato instead of the second carrot,  tmrc_emoticons.)
