30 Second Caramel Apple Cake

  • 2 Red Apples, (quartered and cored)
  • 375 grams plain flour
  • 375 grams sugar
  • 315 grams olive oil
  • 3 eggs
  • 2 teaspoons vanilla bean paste/extract
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon bicarb soda

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Preheat oven to 175 degrees.

    2. Add all ingredients in the order listed.

    3. Mix - 30 seconds/Speed 7.

    4. Pour into greased cake tin and bake for 45 - 55 minutes.

     

    Note: this can be made with different types of cake tins or into cupcakes (shorter cooking time of approx 20 minutes)

    Such a delicious cake! I reduced the sugar quantity a little, but made a runny vanilla icing and drizzled over the top once cooled. I dont have a bundt tin, so i use my large loaf tin. Turned out fine. The 2nd time i made this, i baked in a roasting tin, just so i could get more serving out of the cake. This apple cake recipe is my go to aple cake free recipe now.

    Yes, you can freeze this cake. When thawed I warmed it in the oven for 10-12 mins approx 170C and it makes the outside go crisp and caramelly again!

    Not sure what's going on with mine but I used spelt flour instead and it's still runny in the middle after an extra 25 minutes. Hmm silly me must be the spelt doh!

    An easy cake, but I did feel the sugar flavour dominated and the apple, vanilla, cinnamon flavours were a little lost. If I made this again, I would reduce the sugar (maybe to half).
