  • 100 grams Coconut Flour
  • 100 grams Coconut sugar
  • 60 grams Desiccated Coconut
  • 80 grams Milk, (of your choice)
  • 4 eggs
  • 1 1/2 teaspoons bicarb soda
  • esssence/zest/paste of your choice, (see flavour combinations -->)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    30 Second Coconut Cupcakes
  1. 1. Preheat oven to 160 degrees celcius.

    2. Add all the above ingredients into the bowl.

    3. Mix 30 seconds/Speed 6.

    4. Spoon and distribute into 12 large cupcake patties.

    5. Bake for 13-15 minutes or until a skewer comes clean.

     

    Flavour Combinations:

    Pandan Coconut Cupcakes: add 1 teaspoon Pandan Paste (pictured)

    Coconut Cupcakes: add 1 teaspoon coconut essence

    Chocolate Coconut Cupcakes: 20 grams cacoa/cocoa powder

    Orange Coconut Cupcakes: zest of 1 orange

    Lemon Coconut Cupcakes: zest of 1 lemon

    Vanilla Coconut Cupcakes: 1 teaspoon Vanilla paste/essence/extract

    Crumbly, strong bicarbonate flavour. I recommend less bicarbonate or maybe I shouldn’t have reduced the sugar. Took about 25 min. Potential to be nice. Easy and quick so I might try again.

    The texture of this mixture is more like a biscuit, very dry. It didn't rise at all. And had to cook for longer than 15 mins. I made the chocolate combo and flavour is nice.
