Apple and Sultana Cake

Ingredients

10 portion(s)

  • 2 green apples, peeled, cored and cut into 4
  • 125 g butter cubes
  • 110 g sugar
  • 240 g SR flour
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1 tsp Ginger, ground
  • 120 g sultanas (optional)
  • 1 egg

Recipe's preparation

  1. Preheat oven to 180 deg C

    2.Cook apples 10 min/100 deg/sp 2

    3.Add sugar and butter to warm apples. Mix 20 sec/speed 5 to melt.

    4.Add SR flour, spices, and egg. Mix 15 sec/sp 4.

    5.Stir in sultanas with spatula.

    6. Pour mixture into prepared tin and bake for about 45 minutes

Tip

Use different spices or omit sultanas.

Great as an afternoon treat by itself or serve with freshly whipped cream.

  • This was a lovely moist

    This was a lovely moist recipe, but I made it a bit differently to be a healthier for my toddler.

    I didnt peel or cook the apple, but instead grated it skin-on with some carrot as step 1. I simply added melted butter (20 secs in the microwave!) and sugar to the grated apple & carrot and mixed that through, then proceeded with the rest of the method above. It was quicker and I like having apple & carrot pieces throughout the cake. The only other changes I made was 50/50 white/whole meal SR flour, and 50g sugar & 60g apple sauce, instead of the full sugar amount. Sultanas are a must!  tmrc_emoticons.)

    It went down a treat and will be my base recipe for other variations (pumpkin & pear / zucchini & apple / sweet potato, banana & coconut - yes, really this is a great combo with some dates added for sweetness!)

    have just made and put in the oven, is it only one egg?  there is no reference to egg in the ingredients but is listed in the step with adding flours and spices.
