Apple, Banana and Nut Cookies

  • 80 g cashews or almonds
  • 1 red apple (unpeeled), cored, roughly chopped
  • 130 g unsalted butter, roughly chopped
  • 60 g dark brown sugar (Cookidoo recipe)
  • 1 medium-sized banana (peeled), broken up
  • 30 g Almond milk
  • 190 g wholemeal spelt flour
  • 1 tsp baking powder
  • 100 g rolled oats
  • 0.5 tsp ground cinnamon, plus extra to sprinkle

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Apple, Banana and Nut Cookies
  1. Preheat oven to 180°C. Line two baking trays with baking paper or reusable silicone baking sheets. Set aside.
  2. Place nuts into mixing bowl and chop 6 secs/speed 6.
  3. Place apple in mixing bowl and chop 2 sec/speed 6. Set aside with nuts.
  4. Place butter and sugar into mixing bowl and mix 5 sec/speed 4.
  5. Add banana and almond milk and mix 10 sec/speed 4.
  6. Add add wholemeal spelt flour, baking powder, oats, cinnamon, reserved nuts, and reserved apple. Mix 10 secs/speed 4.

    Scrape down sides and repeat mixing if required.
  7. Place heaped tablespoons of mixture onto prepared trays (I like to use a metal mechanical ice cream scoop to scoop mixture directly onto prepared trays).

    Flatten slightly. Dust lightly with cinnamon and bake 15-20 mins or until golden brown and cooked through.

Tip

Adapted from "Apple, Banana and Macadamia Nut Cookies" from Thermomix Cooking For Your Baby & Toddler by Louise Fulton Keats.

Can be made vegan- substitute butter for coconut oil and use nut/seed milk in place of cow's milk.

Option to make gluten-free with extra fine sorghum flouur or extra fine brown rice flour; however this method has not been tested by author.
