  • 230 grams SR flour, I used Wholemeal
  • 85 grams Milk
  • 220 grams sugar
  • 1 egg
  • 1 level tablespoon vanilla essence

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat fan forced oven to 180C

  2. Cut apple from core and place into thermomix.  Grate 3 seconds speed 8. 

    Scrape down sides of bowl.

  3. Add the SR flour, milk, 1/2 the butter, 1 cup of sugar, egg and essence to the grated apple.  Combine - 2 minutes speed 4.

    Scrape down sides of bowl and mix again 30 seconds speed 4.

  4. Pour mixture into a prepared and lined pan.  I use a loaf pan.

    While cake is baking, combine the cinnamon with the 2 extra tablespoons of sugar.  Set aside.

    Bake mixture in preheated oven for approximately 30-40 minutes or until golden brown on top and cake springs back when lightly pressed with a finger.

  5. While still in the baking pan spread remaining 1/2 tbsp butter on the top of the cake then sprinkle the top of the cake with the cinnamon/sugar mixture. 

    Allow to cool slightly before removing from the pan and cooling on a wire rack.

Tip

I spray my baking pan with canola oil before lining with baking paper.  This helps to catch the sugar top and makes it easy to remove the cake from the pan without loosing the cakes topping.

    This cake was lovely. I reduced the sugar to 150g and used Nuttelex instead of butter. I also added some oats to the top of the cake before baking, which added some nice texture. Could add flaked almonds or similar even. The kids absolutely devoured this one and I was told I could make this every week. WinkBig Smile Thank you for sharing your recipe with us.

    Very yummy. I increased the amount of apple and halved the amount of sugar. I also added cinnamon and a little nutmeg to the batter. Will definitely make again.

    This was great. I actually divided it among 12 muffin cups and cooked for 25 minutes and it was a big hit with my guests. I also melted the butter and dribbled over the cooked muffins before sprinkling with the cinnamon sugar. Worked well.
