Tip
I first started making this to use up all the nibbled apples in my fridge from my toddler.
Just chop those bits off to make up about 3 apples worth from several apples

300g Pink Lady apples peeled and seeds removed
260g Self Raising Flour
50g Raw sugar
110g Shaved cold butter
1 egg
1 heaped teaspoon cinnamon
Oven preheated to 170 degrees fan-forced. Followed all directions, however, used a small ice cream scoop which gave a yield of 48 smaller cookies. Baked for 25 minutes. Left on trays till cold, stored in an airtight container in the fridge. Froze half - reconstitutes well.

Loved these! Great way to use
Loved these! Great way to use up the apples that never end up getting eaten. I had small apples so added four and made them smaller so ended up with 30, only needing 25 minutes of cooking
Apple cookies....great to use
Apple cookies....great to use up apples. Lunch box and freezer friendly
I had some small Fuji apples
I had some small Fuji apples to use up that had gone a bit soft, and while I am a bit of a newbie to the Thermomix I love to give things a try. Started making this tonight and realised I was short on a few of the basic ingredients.... After subbing 1/4 mashed banana for the egg, and subbing the self raising flour with a mixture of the last of my spelt flour, the last of my plain flour, and a bit of buckwheat flour to make up the difference, I then added a few teaspoons of baking powder and the result... YUM. Lucky the mixture even made it to the oven. The batter seemed a bit wet for biscuits so I tried 12 of them, then put the rest into 6 muffin cases. The biscuits turned out great and the muffins look good too! Will be making this again.
I didn't have any granny
I didn't have any granny smith apples and so used the fuji's but they came out quite soft, cooked but soft and not crunchy like the biscuits I expected. Family loved the flavour just the same tho. Maybe cutting down on the sugar did some of the damage with the crispness. Thank you for your help with my abundance of apples.
