Apple Pumpkin Muffins

Ingredients

Muffins

  • 80 grams Pink Lady apple, Quartered
  • 140 grams pumpkin, 2cm dice
  • 50 grams Milk of choice
  • 1 level teaspoon white vinegar
  • 50 grams oil
  • 1 level teaspoon Vanilla Paste
  • 60 grams Coconut sugar
  • 130 grams GF Flour
  • 1 heaped tablespoon Mixed Spice or Cinnamon
  • 1/2 level teaspoon baking soda / bi-carb soda
  • 1 level teaspoon GF baking powder
  • 2 tablespoons Linseeds
  • 2 tablespoons poppy seeds

Recipe's preparation

    Muffins
  1. Place 700g water in Bowl. Add pumpkin and Apple to basket and steam 15min/Varoma/Sp 4

  2. In a small cup mix milk and vinegar and allow to sit to thicken slightly.

  3. Pre heat oven 170 degrees

  4. Once steaming is finished, discard water and place pumpkin and apple into tm bowl. Mix 5 sec/sp4. Allow to cool, in fridge 20mins.

  5. Place all wet ingredients into bowl with pumpkin mixture. Mix 3sec/sp4

  6. Add all dry ingredients. Mix 3sec/sp5. Scrape sides and repeat.

  7. Spoon into cupcake cases and bake at 170 deg for 12 minutes. Allow to cool briefly before removing from tray.

    These are nice, lovely texture - next time I'll chop up some walnuts and add them in. I didn't have any poppyseeds so left that out, and used wholemeal flour.
