      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 degrees.

     

  2. Grease or line a 12 hole muffin tin with cases.

     

     

  3. Add crushed weet-bix and coconut cream to a small bowl and set aside for 10 minutes.

     

  4. Into TM bowl place softened butter, eggs and mix for 20 seconds on speed 4.

     

  5. Add weet-bix mixture, flour, sugar, and stewed apricots to TM bowl and mix for 15 seconds, Counter-clockwise operation, speed 4.

     

  6. Add white chocolate chips and mix until just combined, approx 10 seconds Counter-clockwise operation, speed 4.

     

  7. Spoon mixture into prepared muffin cases

     

  8. Bake for 20-25 minutes, until golden brown and skewer comes out clean

Tip

This recipe could easily be made using any stewed fruit.

I had apricots so used them (cut and cooked in TM for 12 minutes with 50g water per 500g fruit). Alternatively I think rioe bananas could also work well!

You could also use nuttalex or coconut oil instead of butter and use dairy free chocolate bits if you want to make this dairy free too!

    Very yummy.  I used a tin of apple instead and still nice.  Vey moist and healthy too.
