Banana and Chocolate Chip Muffins

  • 3 ripe bananas
  • 95 grams Greek yoghurt
  • 85 grams honey
  • 2 teaspoons vanilla extract
  • 70 grams oil
  • 1 egg
  • 210 grams plain flour
  • 1 teaspoons bicarbonate of soda
  • 15 grams cocoa powder
  • 1 pinch salt
  • 125 grams chocolate chips

Recipe's preparation

    Muffins
  1. Preheat oven to 190 degrees and prepare muffin tray.
  2. Place bananas into bowl and mix 5 seconds, speed 6. Scrape down sides and repeat if necessary.
  3. Add greek yogurt, honey, vanilla extract, oil, egg and mix 15 seconds, speed 4 or until well combined.
  4. Add plain flour, bicarb, cocoa powder and salt and mix 5 seconds, speed 4. Scrape down sides and repeat for 2-3 seconds or until just combined. Don't over mix.
  5. Fold through choc chips.
  6. Divide mixture between muffin cases.
  7. Bake for 15 minutes or until cooked through. Cool for 5 minutes before transferring to wire rack to cool completely.
