Banana and peanut butter cupcakes

Ingredients

Cakes

  • 150 grams Salted Peanuts
  • 180 grams raw sugar
  • 115 grams Butter, Softened
  • 3 medium bananas, Peeled and chopped
  • 300 grams plain flour
  • 1.5 level teaspoons baking powder
  • 1/4 level teaspoon bicarb soda

Icing

  • 240 grams icing sugar
  • 300 grams creamy peanut buter
  • 115 grams Butter, chopped
  • dash vanilla
  • 1 tablespoon chopped peanuts extra or grated chocolate, for decoration

Recipe's preparation

    Cakes
  1. Preheat oven to 180C. Place 24 cupcake liners into  prepared cupcake pans.

    1. Tip peanuts into the Closed lid and crush sp5/5 seconds. Set aside.

    2. Add sugar to Closed lid and mill sp9/10 secs.

    3. Add remaining ingredients to Closed lid, including the chopped peanuts.

    4. Blend sp 4.5 for 1 minute, using spatula if neccessary to assist.

    5. Scrape and scoop evenly amongst the cases.

    4. Place into oven and set timer for 25 minutes, or until tested.

  2. Icing
  3. 1. Blend all ingredients (except extra peanuts/ chocolate) on sp4/30secs. Scrape and repeat.

    2. Spread or pipe onto cooled cupcakes, and sprinkle with optional topping.
