Banana Berry and Almond Loaf (from Lola Berry)

  • 130 grams Frozen Berries
  • 60 grams coconut oil, melted
  • 20 grams Maple syrup
  • dash vanilla essence

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven to 180 deg and grease and line a loaf tin.


    Place Almonds in TMX bowl 5 sec, speed 9 and set aside.

    If coconut oil is solid, place in TMX bowl and melt 2 mins, 50 deg, speed 1.

    Add bananas and mash 3 sec, speed 5.

    Add berries, maple syrup, vanilla and eggs and mix 3 sec, speed 3.

    Add almond meal, bicarb soda, salt and cinnamon and mix 10 sec, speed 3.

    Poor into loaf tin and sprinkle with extra chopped almonds if desired.

    Bake 30-35 minutes or until skewer inserted in centre comes out clean.

    Cool in tin for 5 minutes before transferring to wire rack.

    Serve with butter or maple syrup.

    Makes 1 loaf.
