Banana Bread

  • 220 grams plain flour
  • 1&1/4 tsp baking powder
  • 1/2 tsp bicarb soda
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt
  • 2 egg whites, or whole egg if you prefer
  • 4-500 grams banana
  • 130 grams brown sugar
  • 50 grams vegetable oil
  • 6

Recipe's preparation

  1. Preheat oven to 180 degrees.

    2. Lightly coat loaf pan with cooking spray

    3. In a bowl, combine flour, baking soda, cinnamon and salt, set aside.

    4. Combine eggs, banana, sugar and oil in TM bowl.  Mix for 10 seconds on speed 4, or until combined, but still a little chunky.

    5. Add flour mixture to bowl and mix Counter-clockwise operation for 20 seconds on speed 4.

    6. Spoon the batter ino the pan, and place in oven or 45 to 50 minutes or until a skewer inserted in centre comes out clean.

    7. Cool in pan for 10 minutes then turn out onto a rack.  Allow to cool completely before slicing.

    Very nice. Made exactly as per the recipe but also added sultanas and walnuts at the end and sprinkled with cinnamon sugar. The main issue was we didn't realise until the end that baking powder was in the ingredients but not in the instructions. We took it out of the pan and mixed it in. Some people complained about the consistency but maybe they never added the baking powder??

    A great easy recipe. I made a few changes I used 90 grams gluten free flour 60 grams psyllium husks and 70 grams of almond meal. I had no brown sugar so I used coconut sugar. It is yum. Thank you for sharing.

    Playdate tomorrow & couple broen bananas had me gind this recipe. Didn't have enough banana so chucked.some defrosted banana in too, plus full 2 eggs and reduced sugar to 100g Made a very wet mixture, plus a weak oven, meant i cooked it for 1.5hrs. Was still worried it wasn't enough & g oing to be gluggy.... but it turned out beuatiful. Moist but no stodgy part!


    So tasty, toddler approved for breakfast!!

    Raquelra24:I'm yet to make banana bread with my thermomix. But maybe you could try turning your oven down to 160 instead or moving the banana bread further towards the bottom of the oven when cooking.

    Fantastic! Very easy to make. Used 400g bananas and two whole eggs. All other ingredients as stated in recipe. Mixed wet ingredients for 6sec, instead of 10. Cooked loaf for 50mins in fan forced oven. Smells and tastes delicious! Rose well and came out of the tin easily after cooling. SmileBig Smile

    Can't get it right. I've tried 3 times already and bottom is always a bit undercooked/gooey and top starts to burn. Very frustrating! I've picked this recipe because it has so many good reviews, but I don't understand why it's not working for me ;(

    Superb! Softest bread I've ever had. The only thing I changed was that I used orange infused olive oil (just because I had it) and it gave a nice hint of orange to the bread.

    This is by far the best banana bread recipe ever, that is actually close to bread consistancy. I use probably half the quantity of bananas suggested and it is awesome!

    Passed my toddlers taste test so thumbs up. I used 2 whole eggs and coconut oil in place of vegetable oil. 3 bery ripe bananas got me just over 400gms. I could have reduced the sugar as my bananas were very over ripe almost blackand therefore sweet.

    Perfect consistency! Loved this recipe. Smelt amazing and tasted so good. It was so light and fluffy!! I used 2 whole eggs, 400g of bananas and added 150g of chocolate chips. I put it in the oven (fan forced) for 50 minutes on the middle shelf and it came out perfect first time.

    Tips to improve my technique please

     

    I love this recipe! The taste is amazing. However, I follow it to a T, and somehow, after taking it out of the oven, it sinks, and when cutting open the banana bread, the bottom half of it is still a bit undercooked, whilst the top is almost burnt. Any ideas how I can fix it? should I be turning the oven temperature down? Or adding more bicarbonat/baking powder?

    I only put 1 whole egg in and later read comments saying you need two. I found this a little ambiguous.

    Once cooled I cut into portion sizes and freeze, my hubby then takes one out before bed to be defrosted in the fridge before work the next day tmrc_emoticons.)
