Banana Cake

  • 180 g raw sugar
  • 110 g Butter or Margarine
  • 2 eggs
  • 3 ripe bananas, quartered
  • 240 g Self Raising Flour
  • pinch salt
  • 2 tbsp Milk
  • 1/2 tsp Bi Carb Soda

Recipe's preparation

  1. Grease and line ring cake pan or use silicone bundt pan.  Pre-heat oven to moderate. (190-200 C electric)

    Mill sugar for 10 secs, sp 9.

    Add butter, eggs, and bananas, mix for 15 secs, sp 5.

    Add flour, salt, milk and bi-carb soda, mix for 15 secs, sp 5. (Scrape down sides after 10 secs if needed.)

    Pour into cake pan.  Bake for 25-30 mins. (Longer if bananas are large.) Test cake with scewer to see if it is done.)

     

  2. Turn out onto wire rack to cool.

    Ice with lemon or cream cheese icing if desired.

Tip

I find that cakes with fruit in them are extremely moist so I always use a ring cake pan to ensure even baking all through.  You could also use loaf tins.

The amount of batter varies considerably depending on the size of the bananas.  If too much for my cake pan, I make a few muffins with the excess.

    Quick & easy. Great way to use old bananas. I too reduced the sugar to 140g & reckon you could easily go less again.
    suggestion: maybe add a little cinnamon or nutmeg to mixture.

    So, soooo good that I've moved the recipe to Cookidoo 👏🏻. Moist enough that it doesnt need any icing (imo). Had to cook longer, then almost forgot it but everyone raved how good it was.

    Mixture was quite thick so added another tbs of milk
    cooking time....25mins then check
    Made 6 large muffins instead of 1 cake

    Great light and fluffy recipe.  I've made it into cupcakes ( got 24) each time for ease of school lunch boxes, comes out prefect each time. As a treat I add a small amount of chocolate chips, 1 tsp cinnamon and ice with cream cheese icing with toasted coconut on top yummy!,! Loved by all thank you very much for sharing.

    This is my go to Banana Cake/Muffin recipe.  So easy and works every single time!!  I add cinnamon and chopped walnuts for a different texture and they never last the day.  Chopped dates and Chia seeds work well with this recipe as well.  Love it!!
