  • 250 grams Mixed Nuts, 50g reserve for topping
  • 3-4 Medium ripe bananas, broken into pieces
  • 80 grams Butter, cut into approx. 3cm pieces
  • 100 grams dates, pitted
  • 100 grams rice malt syup
  • 2 large eggs
  • 1 teaspoon Bi Carb of Soda
  • 1 pinch salt
  • 1 teaspoon ground cinnamon, (optional)
  • 250 grams Plain Wholemeal Flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Preheat oven 160 °C. Grease and line a bread loaf tin

    Roast nuts and coarsely mill nuts – 3sec/Speed 5.

    Reserve 50g in a bowl for topping.

    Without cleaning bowl add butter and melt - 2mins/60 °C/Speed 1.

    Add bananas, rice malt syrup & dates and mix – 10sec/Speed 8.

    Add eggs and beat20sec/Counter-clockwise operation/Speed 4

    Add Bi carbonate of soda & pinch of salt and mix – 3sec/Speed 4.

    Add nuts, cinnamon and flour and mix – 5sec/Reverse/Speed 4.

    Pour mixture into lined tin and top with reserved nuts.

    Bake for approx. 60-70 mins at 160 °C.

     

    Leave in the tin to cool.

Tip

Don’t over mix when flour is added.

Depending on your particular oven, it may require additional cooking time. Test at 60min by inserting a skewer and it should come out clean otherwise leave in for additional time.

Can be toasted and served with butter.
