Cake

  • 150 g raw sugar
  • 2 eggs
  • 250g overripe bananas, halved
  • 120g Milk
  • 2 teaspoon vanilla extract
  • 120 g Butter, cubed
  • 1 teaspoon bi-carb
  • 225 g self-raising flour

Icing

  • 80 g cream cheese
  • 40 g Butter
  • 195 g icing sugar
  • 2 teaspoon fresh lemon juice

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. 1. preheat oven to 170*c. grease and line slice tin.
    2. Place sugar, butter, eggs, banana and vanilla into bowl and mix 50 seconds, speed 5.5.
    3. add remaining ingredients and mix for 1-20 seconds speed 4 until just combined.
    4. Place into oven and bake for 35 minutes, or until a skewer comes out clean from the middle.
    4. allow to cool completely . (If making in advance and planning to freeze, double glad wrap and place in the freezer. you will just neef to defrost and make icing on the day needed).

    Icing

    1- Place butter, cream cheese and lemon juice into mixing bowl. Mix on speed 4 with no time attached.
    2- Once all combined, slowly start to add the icing sugar through the hole in the top. Mix until completely combined and smooth.
    3 - This recipe makes 20ish decent sized pieces in the slice tin.

    I saw recipe this pop up on a thermie page and because I have an abundance of bananas thought I’d give it a go!

    I halved the recipe because I didn’t want to be tempted to eat it all haha!
    I used GF flour (plain)
    I added half a tsp of baking powder
    I used stevia instead of raw sugar
    I threw some dark choc chips on top because trying to keep calorie count low in my treats 😬

    and it STILL turned out perfect!

    Really yummy. I used a large slice tin, spelt flour and crushed walnuts on top. The walnuts are a must for some great crunch. My cake only took 20mins in a fanforced oven at 170. Thanks for sharingLove

    If you have not tried this yet - DO IT!
    I have made lots of times and one of the best recipes to use up any bananas. I pop in a foil baking tray lined with baking paper - easy clean up. Also I add some crushed walnuts on top and EVERYONE loves it!! 10 out of 10

    Very easy and quick to cook in the Tupperware silicon slice tray (it is slightly too big for it but works ok). I halved the sugar (and used rapdura) and it was plenty sweet enough. I haven't made the icing as it doesn't really need it but it looks nice!

    This definitely reminds me of the old Sara Lee banana cake. I reduced the sugar in the cake to 100gm and down to 60gm in the icing. It's perfect for us.
    I'll definitely be making this again and again.
    If anyone can replicate the Sara Lee carrot cake I'll worship you forever!
