Cake

  • 150 g raw sugar
  • 2 eggs
  • 250g overripe bananas, halved
  • 120g Milk
  • 2 teaspoon vanilla extract
  • 120 g Butter, cubed
  • 1 teaspoon bi-carb
  • 225 g self-raising flour

Icing

  • 80 g cream cheese
  • 40 g Butter
  • 195 g icing sugar
  • 2 teaspoon fresh lemon juice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. preheat oven to 170*c. grease and line slice tin.
    2. Place sugar, butter, eggs, banana and vanilla into bowl and mix 50 seconds, speed 5.5.
    3. add remaining ingredients and mix for 1-20 seconds speed 4 until just combined.
    4. Place into oven and bake for 35 minutes, or until a skewer comes out clean from the middle.
    4. allow to cool completely . (If making in advance and planning to freeze, double glad wrap and place in the freezer. you will just neef to defrost and make icing on the day needed).

    Icing

    1- Place butter, cream cheese and lemon juice into mixing bowl. Mix on speed 4 with no time attached.
    2- Once all combined, slowly start to add the icing sugar through the hole in the top. Mix until completely combined and smooth.
    3 - This recipe makes 20ish decent sized pieces in the slice tin.

    This was really easy and came out so fluffy and tasty. I reduced sugar to 130g and with very overly ripe bananas it was definitely sweet. I also only added 60g icing sugar to the icing and was sweet enough for the family. They loved it, thanks.

    So good!! Have been looking for a good banana cake recipe for ages. I made them into cupcakes and had the oven set to 170 (fan force) I put them in for 16 minutes but got distracted after hitting the timer stop so they where in for 18 minutes and that was just too long. Next time I think 14 minutes and they would have been perfect!

    AMAZING! Such a yummy cake! I cooked mine in a 23cm square tin, and this was a great size. And since I didnt have cream cheese, i did a basic icing - 1 cup icing sugar, 2 tablespoons of butter and some vanilla. So delicious!

    absolutely fantastic! cooked in a 9 inch (23 cm) tin, measured at top of tin, used 80 g coconut suagr and thawed frozen over ripe bananas.

    I followed this icing recipe as it so easy and uses much less sugar and a whole container of cream cheese (so no leftovers) :
    1/2 cup (80g) sifted Pure Icing Sugar
    1/2 tsp vanilla essence
    250g spreadable cream cheese

    used hand mixer to beat icing, iced cake, then topped with
    desiccated coconut

    Just made this recipe for the first time a couple of days ago and don't know what took me so long. Makes a good sized cake so plenty to share with my family visiting, and stays fresh!! Still had some ripe bananas so have made another batch to freeze. It really is delicious, not too sweet, and the cream cheese frosting is lovely. Will definitely be a regular addition to my baking.

    Made mini cupcakes for school lunchbox and also used GF flour. Cooked for 15min and they're light and fluffy. Havent added the icing but reckon that would take this to the next level!

    delicious, thank you for a great recipe... my son wanted a banana cake with icing... i made it , including icing on it, froze it and sent it interstate... it survived the trip from SA to ACT and was perfect, moist and oohhh so delicious apparently Wink will definitely make it again... and something handy to have in freezer for unexpected visitors...defrosts very quickly in microwave and tastes like freshly made..
