Cake

  • 150 g raw sugar
  • 2 eggs
  • 250g overripe bananas, halved
  • 120g Milk
  • 2 teaspoon vanilla extract
  • 120 g Butter, cubed
  • 1 teaspoon bi-carb
  • 225 g self-raising flour

Icing

  • 80 g cream cheese
  • 40 g Butter
  • 195 g icing sugar
  • 2 teaspoon fresh lemon juice

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. 1. preheat oven to 170*c. grease and line slice tin.
    2. Place sugar, butter, eggs, banana and vanilla into bowl and mix 50 seconds, speed 5.5.
    3. add remaining ingredients and mix for 1-20 seconds speed 4 until just combined.
    4. Place into oven and bake for 35 minutes, or until a skewer comes out clean from the middle.
    4. allow to cool completely . (If making in advance and planning to freeze, double glad wrap and place in the freezer. you will just neef to defrost and make icing on the day needed).

    Icing

    1- Place butter, cream cheese and lemon juice into mixing bowl. Mix on speed 4 with no time attached.
    2- Once all combined, slowly start to add the icing sugar through the hole in the top. Mix until completely combined and smooth.
    3 - This recipe makes 20ish decent sized pieces in the slice tin.

    Very easy and quick to cook in the Tupperware silicon slice tray (it is slightly too big for it but works ok). I halved the sugar (and used rapdura) and it was plenty sweet enough. I haven't made the icing as it doesn't really need it but it looks nice!

    This definitely reminds me of the old Sara Lee banana cake. I reduced the sugar in the cake to 100gm and down to 60gm in the icing. It's perfect for us.
    I'll definitely be making this again and again.
    If anyone can replicate the Sara Lee carrot cake I'll worship you forever!

    This is a fail proof recipe.
    I completely mucked this up - put ALL of the cake ingredients in the bowl then mixed it for 50 seconds, speed 5. Scraped down the sides halfway through before realising my mistake.
    Cooked it anyway.
    It was light, fluffy and delicious.
    I've had so many compliments, I think I'll do the same again next time.

    Yum!
    So moist and fluffy! Tastes just like the Sara Lee cake.
    I used 100g sugar and found it just right for sweetness.
    I didn't have any icing sugar for the icing but made my own (it' what you do when you own a thermomix 😁). Icing was a tad sweet for my liking but will reduce sugar next time.
    Husband enjoyed the cake! Will definitely make again.

    Yum! I used 80g coconut sugar instead of the 150g raw and lite nuttelex instead of butter. I then made them into muffins and they were delicious!!! Took approx 15mins in the oven and make sure you wait until they are completely cooled before removing, otherwise they'll stick. I've eaten way too many of them!

    Delicious. I made 1.5 times the recipe and cooked it in a glass lasagna pan. 45 minutes at 175 and it turned out great. I used Orgran egg replacer (food allergies). Will definitely make this again.

    I made this today - as we are Gluten Free household I subbed with Gluten Free flour and didn't have quite enough bananas so added in some medjool dates to make up the 'banana weight' - it was absolutely delicious and that icing is to die for!! Thanks for sharing this recipe/ 100 out of 10 for recipe which is so quick and easy!
