Cake

  • 150 g raw sugar
  • 2 eggs
  • 250g overripe bananas, halved
  • 120g Milk
  • 2 teaspoon vanilla extract
  • 120 g Butter, cubed
  • 1 teaspoon bi-carb
  • 225 g self-raising flour

Icing

  • 80 g cream cheese
  • 40 g Butter
  • 195 g icing sugar
  • 2 teaspoon fresh lemon juice

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. 1. preheat oven to 170*c. grease and line slice tin.
    2. Place sugar, butter, eggs, banana and vanilla into bowl and mix 50 seconds, speed 5.5.
    3. add remaining ingredients and mix for 1-20 seconds speed 4 until just combined.
    4. Place into oven and bake for 35 minutes, or until a skewer comes out clean from the middle.
    4. allow to cool completely . (If making in advance and planning to freeze, double glad wrap and place in the freezer. you will just neef to defrost and make icing on the day needed).

    Icing

    1- Place butter, cream cheese and lemon juice into mixing bowl. Mix on speed 4 with no time attached.
    2- Once all combined, slowly start to add the icing sugar through the hole in the top. Mix until completely combined and smooth.
    3 - This recipe makes 20ish decent sized pieces in the slice tin.

    Very nice cake, nice and moist and doesnt crumble. I mixed all ingredients togther for the icing and didnt bother adding a little bit at a timing with the icing sugar, still turned out pretty good. Will be using this recipe again.

    I only used 130g sugar and added a cup of walnuts at the beginning. The slice was soft and delicious and so easy. Adding the walnuts with the flour would give it more crunch. Regardless I like it with walnuts and will make it whenever I have a couple of over ripe bananas. Smile

    I thought I would give this recipe a go as I’ve seen so many people rave about it. Wanted to do something different to the standard banana bread.

    I was unsure of what size slice tin works best so I used a slice tin that was 20cm x 30cm and 3cm high.
    Next time I would probably use a smaller tin to make the cake abit thicker as the cake I made baked to 3cm high.

    Was as nice recipe and would make this on a regular basis again.

    I saw recipe this pop up on a thermie page and because I have an abundance of bananas thought I’d give it a go!

    I halved the recipe because I didn’t want to be tempted to eat it all haha!
    I used GF flour (plain)
    I added half a tsp of baking powder
    I used stevia instead of raw sugar
    I threw some dark choc chips on top because trying to keep calorie count low in my treats 😬

    and it STILL turned out perfect!
