Big Mumma's Apple Almond and Chocolate Muffins - Egg & Dairy free

Ingredients

  • 180 grams Nuttelex
  • 3 portions Orgran No Egg Replacer, 3 eggs equivalent
  • 150 grams So Good Soy Milk, or goat/rice/almond milk
  • 1.5 teaspoons vanilla extract or essence
  • 180 grams Coconut sugar
  • 180 grams Self Raising Flour
  • 40-50 grams cocoa
  • 1.5 teaspoons baking powder
  • 1 Granny Smith Apple
  • 80 grams almonds, raw

Recipe's preparation

    Method
  1. Preheat Oven to 180 degrees C (not fan forced)

    Prepare muffin tray with 14-16 patty pans

    Place almonds in bowl and mill to almond meal 5-10sec/speed 7, set aside

    Peel and wedge apple into 8 rough pieces. Chop 3-4sec/speed 4, set aside

    Place Nuttelex into mixing bowl and melt 2min30sec/60/speed 4

    Add all remaining ingredients including chopped apple and almond meal set aside to bowl, mix 25sec/speed 5

    Pour into patty pans and bake approx 17mins or until skewer comes out clean. Allow to cool before transfering to wire rack, and store in fridge for several days in airtight container.
