Brazilian / Portuguese Carrot Cake

Ingredients

Dough

  • 250 g Raw carrots
  • 4 eggs
  • 110 g oil, e.g..sunflower
  • 320 g caster sugar
  • 220 g plain flour
  • 1 tablespoon baking powder
  • 1 heaped teaspoon Bicarbonate sodium

Icing

  • 40 g Butter
  • 70 g caster sugar
  • 40 g cocoa powder
  • 40 g Milk

Recipe's preparation

    Cake preparation
  1. Pre heat oven 180C

    Cut pelled carrots, 3cm wide, grate 15 sec/ speed9. 

    Add eggs, oil. sugar, program 1min/speed 6. 

    Add flour, baking powder and bicarb, 15 sec/speed 3. 

    Coat the tray with buter and flour, add mix, and bake for approximately 40 min. Remove from oven and wait until it cools down to remove from tray. 

     

  2. Icing
  3. Add all ingredients, program 8 min / Varoma/ Speed 2. Ice cake.
