- 45 grams almonds
- 70 grams dates
- 20 grams Shredded coconut
- 220 grams Self Raising Flour
- 80 grams oats
- 80 grams raw sugar, You can use less if prefer
- 1 apple, I prefer green but up to you
- 2 eggs
- 80 grams oil
- 200 grams Milk

Recipe's preparation
Pre heat oven to 180 for texas muffins and 160 for smaller muffins.
Add Almonds, Dates Coconut and Apple (cut in quarters) to TM bowl. Place on "Closed lid" and turbo for 2 seconds twice. Set aside.
Add dry ingredients to bowl and mill for 5 seconds on speed 8
Add Milk oil & eggs and mix for 15 seconds on speed 5
Add cada and mix for 5 seconds on speed 3.
Bake for approx 20 mins.

We love this recipe, we use buckwheat flour, 1/2 olive and 1/2 coconut oil, instead of the sugar we add 50gr raisins, add 2 tsp cinnamon, and we use almond milk. Kids 9 and 6 love them! They also love them crumbled into yoghurt!

re: @Vanessabakes: I tried half coconut oil, half olive oil with good result. Hesitant to use all coconut oil without adding extra egg or milk as I find using just coconut oil in baking tends to result in things being a bit too dry.
Muffin is dense without being
Muffin is dense without being dry, and a good balance of sweetness - perfect for breakfast! Used half olive oil, half coconut oil; half raw sugar, half coconut sugar. Wouldn't mind a bit more of a flavour punch so next time will experiment with increased Apple content and some cinnamon.

I blitzed the hell out of the
I blitzed the hell out of the almonds, dates, coconut and apple as I was making these in the hope that I could use them in the children's lunchboxes. They were a success, and I will be making these regularly!
This was a really nice recipe
This was a really nice recipe thanks, I used wholemeal flour and brown sugar, would probably next time add some cinnamon or mixed spice just for a little bit of extra flavour. Loved the texture though with the little bits of almond through it, yum! I got 12 regular sized muffins from the mix.

Made these today and glad I did. What a great idea for breakfast on the run or a healthy snack. I added a handful of craisins and a teaspoon of cinnamon as others suggested, thank you! Just did another batch with homemade jam in the centre. Yum!

Made these today with 60g raw sugar, which was perfect for us. Lovely, quick and easy. I think I'll add some chia seeds next time too and maybe some linseeds for a little bit of extra goodness

I didn't have any apple, so used a ripe banana instead and extra fresh cocunut and 220g whole wheat flour, with salt and 2 teaspoons baking powder. Still worked out delicious.

CADA stands for Coconut, Almonds,Dates and Apple. Its a quick easy muesli that came from Cyndi O'Meara's Healthy Eating cookbook.
its a great quick breakfast in the morning and lovely with some Greek Yoguart.
just place a handful of each in your Thermomix and pulse on Turbo a couple of times.
