- 350 grams sugar
- 4 eggs
- 350 grams oil, (Rice Bran)
- 300 grams GF SR Flour
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon dried ginger
- 125 grams walnuts
Icing
- 250 grams icing mixture, Gluten Free
- 1 lemon rind and juice

Recipe's preparation
1. Place carrot, sugar, oil and eggs in Thermomix.
2. Chop for 10 secs on speed 7.
3. Add flour, vanilla, cinnamon, ginger and walnuts to Thermomix.
3. Mix for 7 secs on speed 5.
4. Pour into a lined 20 cm tin and bake at 180 for 45 to 50 mins.
1. Put icing and lemon juice into thermomix.
2. Mix on speed 4, 90 degrees for 3 minutes.
3. Glaze warm cake.

Tip
I use White Wings gluten free flour mostly but sometimes use other combinations including almond meal. If I don't need it to be dairy free I put a lemon cream cheese frosting on the top. Tonight it needs to be dairy free as well.
