Carrot Cake
- 3-4 carrots
- 3 eggs
- 200 g brown sugar
- 3/4 Cup oil
- 1 level teaspoons bicarbonate of soda
- 1/2 level teaspoons cinnamon
- 1/2 level teaspoons mixed spice
- 1/2 level teaspoons Nutmeg
- 300 g Self Raising Flour
- 100 g Chopped walnuts
Icing
- 200 g cream cheese
- 1 lemon zest & juice
- 1 cup icing sugar

Recipe's preparation
- 1. Preheat oven to 180 degrees (fan forced oven) and grease a cake tin.
2. Cut carrots into chunks (no need to peel) and place in bowl. Chop on speed 7 for 4 seconds. Remove from bowl.
3. Place eggs, oil & brown sugar in bowl mix on speed 8 for 5 seconds. Add other ingredients mix on 4 for 8 seconds.
4. Add walnuts and carrots, press reverse for 5 seconds on speed 4.
5. Pour mixture into prepared tin and bake for 30-35 minutes.
6. Clean bowl then add icing ingredients, mix on speed 5 for 4 seconds. Place in fridge until needed.
7. When cake is cooked, leave in tin for 15 minutes then put on a rack to cool. When cold icing with cream cheese and sprinkle with extra walnuts. Enjoy!
