Chelsea's Carrot Cake Muffins

  • 170 g carrots
  • 2 eggs
  • 1 tsp vanilla essence
  • 160 g sunflower oil
  • 200 g sugar
  • 230 g flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Pre heat oven to 200°C and line/spray a 12 hole muffin pan
  2. Cut carrots into 5cm chunks and weigh into bowl.
    4 seconds speed 6
    Add to a bowl and set aside
  3. Add eggs, vanilla and oil
    10 seconds speed 5
  4. Weigh in sugar
    10 seconds speed 5
    Scrape lid and sides of bowl
  5. Weigh in flour, baking powder, baking soda, salt, cinnamon, pineapple & add carrots back into the bowl.
    4 seconds speed 4
  6. Divide into muffin tin and cook for 23-28 minutes

Tip

If you like walnuts or raisins/crasins add in at the final step.
Ice with cream cheese frosting or dust with icing sugar once completly cooled
