Chelsea's Quick Cinnamon Scrolls

Scrolls

  • 450 grams flour
  • 3 teaspoon baking powder
  • 1 pinch salt
  • 135 grams Butter
  • 240 grams Milk

Filling

  • 120 g Butter, Softened
  • 90 g brown sugar
  • 15 g ground cinnamon

Icing

  • 80 g cream cheese, Softened
  • 50 g icing sugar
  • 15 g freshly squeezed lemon juice
  • 1/2 tsp Vanilla Paste

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Preheat oven to 210°C. Line a baking tray with baking paper and set aside.
  2. Get out the butter & cream cheese to soften.
  3. Weigh in flour, baking powder, salt and butter. Process for 5 seconds on speed 5.
  4. Weigh in 240g of milk and process for 7 seconds on speed 5.
    Dough mode 1 minute.
  5. Place dough onto a floured surface and roll into a rectangle approx 30x40cm.
    Wash & dry mixing bowl
  6. Weigh in softened butter, brown sugar & cinnamon. 5 seconds speed 5. Repeat until combined and smooth, scrape down the sides inbetween repetitions.
  7. Spread out onto rectangle. Cut into strips before rolling to keep the shape circular. Roll into circles and place on baking tray.
  8. Bake for 12-15 minutes or until cooked.
  9. While they are cooking move onto the icing.
  10. Weigh in cream cheese, icing sugar and lemon juice. Mix 4 seconds speed 4. Scrape the sides and repeat until smooth.
  11. Smother scrolls with icing when they are hot from the oven

Tip

You can add raisins or white chocolate chips to scrolls before rolling & baking
